Schoolnight recipes
















Deciding what to eat on a weeknight can be a chore, so I decided to post a few recipes out here just for work-day nights. This is a fairly new combination that I came up with after a few trips to Whole Foods.

Jamaican jerked chicken skewers with curry rice.

In Whole Foods, at the meat counter, they sell chicken skewers with a "jerk" marinade, although not as good or spicy as a true Jamaican jerk seasoning, it is still pretty tasty, and at 1.99 a stick, a good deal. 2 kebabs should be plenty for one person. At first I was grilling the chicken and serving it on the stick a la carte with maybe a salad, then one day I paired it with some spicy yellow rice, it was good but something was still missing. So after a few curries at Gateway to India (see other story) I found the inspiration I needed, ansd so the hunt began. I discovered a boxed rice in Publix that complimented the kabobs nicely. It is "Near East" brand curry flavored rice pilaf, which by the way is also available at Whole Foods if you're looking for one-stop shopping. So with the rice, the kabobs and some frozen peas thrown into the mix, you should be good to go.
